My addiction to Ben & Jerry’s ice cream is BACK and I need help!
I need to find a tasty dessert / snack that I can nibble on guilt free when I’m vegging out on the sofa after a tiring day of mummying. Something low sugar, no dairy, low calorie but DELICIOUS.
But surely that must be too good to be true and I love ice cream but it seems so hard to make – or is it……
What if you could find an easy ice cream recipe and make healthy ice cream using only 3 healthy ingredients!? Haha well, I aim to please people, I aim to please.
A bit like my healthy chocolate pudding recipe, this has all the rich, creamy texture of the real thing with none of the dairy or sugar!
This healthy 3 ingredient ice cream is delicious, great as a healthy treat for the kids and great for mummy to enjoy after a long day – completely guilt free!
You’ll need to start with frozen bananas. So take those over ripe bananas, slice them up, lay them flat in a freezer bag and freeze for a few hours (I usually do this in the morning so they are ready at night time). Once the slices are frozen, use them immediately or keep frozen in a zip-top plastic bag or airtight container for up to a month.
This recipe can be made using the 3 simple ingredients listed below but you can miss out the cocoa if you don’t want it chocolate. You can add some white chocolate or dark chocolate chips. Even some peanut butter. Experiment if you like or keep it simple using the ones below. As an extra treat (in the ones pictured) i drizzled a little chocolate sauce round the edged. Mmmmmm.
3 frozen banana slices
Up to 1 cup of almond milk
2 tablespoons of cocoa
Simply add the banana slices to a food processor and add about half of the milk. Start to blend up. You might have to stop and mix the bananas in (they will start to break down). Add the rest of the milk and bend until the mixture is the texture of soft-serve ice cream, scraping down the sides as necessary. Add the cocoa and / or other ingredients and blend again.
Spoon the ice cream into bowls and serve immediately. Or what I like to do is spoon them into little round storage tubs with lids then pop in the freeze and they’ll last for about a week – well they don’t really, they’re usually long gone before the weeks up!
