Healthy Chocolate Protein Balls

I have to eat every 2 hours or so (the joys of having a fast metabolism and literally getting the shakes if I don’t eat little and often).  So snacks are a 2-3 times a day occurrence for me.

Now, fruit’s good and all, but alternating a banana, an orange, an apple….. every day gets a little bit boring.  And is it just me who doesn’t feel particularly satisfied after chomping on a run of the mill piece of fruit?

Needless to say, I’m constantly on the hunt for new, healthy snacks that still taste like you’re getting a treat.

I’m not asking for much really, just something tasty, healthy, satisfying, ready to grab on the go – and chocolatey is never a bad thing!

That’s where these little gems that I like to call Healthy Chocolate Protein Balls come in.

Protein ball recipes are a perfect energy booster and great for when you want a healthy snack that’s packed full of goodness. They seem to be huge at the moment (or maybe they have been for ages, I’m  just slow to catch on….) Either way, they’re a great go-to snack and a versatile one at that.

These energy balls in particular tick all of my snack boxes: Quick. Easy. Nutritious. No bake. Ingredients you most likely have in your kitchen. Chocolate……. = WINNER!

Chocolate Energy Balls
 
A delicious snack to refuel. These energy balls in particular tick all of the snack boxes: Quick. Easy. Nutritious. No bake. Ingredients you most likely have in your kitchen. Chocolate....... = WINNER!

Ingredients
  • 2 ripe bananas
  • ¼ cup of honey
  • ½ cup of low sugar peanut butter
  • 2 cups wholegrain oats
  • 1 tsp chia seeds
  • cocoa
  • Optional topping:
  • 30g dark chocolate
  • 1 tsp coconut oil
Instructions
  1. Simply mash the banana then add the honey, peanut butter, oats, seeds and mix.  You don't have to add cocoa but if, like me, you are a chocoholic, add enough cocoa to your desired taste. Roll into balls and place on a tray covered with baking paper.
  2. As an extra indulgent treat add the chocolate topping. Melt the dark chocolate and coconut oil together in a bowl in the microwave (careful not to burn the chocolate) and with a teaspoon, drizzle the melted mix over each ball.
  3. Once made, put in the fridge to chill for an hour or so then enjoy.  These can keep in an airtight container in the fridge for up to 5 days.
